A working bar typically stocks five vessels: 60–75 ml espresso demitasse, 120–150 ml cortado glass, 150–180 ml cappuccino cup, 180–220 ml flat white tulip, and a 240–300 ml latte cup or bowl. Each size locks an espresso-to-milk ratio. Swap the cup and you've changed the drink β€” pour a flat white into a latte cup and the texture collapses.

Look at any famous specialty bar's photo. The vessels are always the silent signature β€” Acme tulips in Australasia, Notneutral Lino in the US, Loveramics in much of Europe and Asia.
