Flat vs conical burrs
Two geometries, two flavor signatures

Flat burrs are two parallel discs; coffee is thrown outward by centrifugal force, producing a tight particle distribution. The cup tends to be brighter, more clear, with separated high notes. Conical burrs are a cone inside a ring; coffee falls through by gravity, producing a wider distribution with more fines and boulders. The cup tends to be heavier, sweeter, more chocolatey. Neither is better — they're different palettes.
CRAFT NOTE
Light Ethiopian on flat burrs sparkles. Dark Brazilian on conical drips like syrup. Match the grinder to what you drink most.
